Corn Relish Lacto-Ferment

 My First Attempt at Corn Relish....

 - 5 cups organic corn kernels
- 1 cup frozen chopped organic beet stems
- 4 slices from a large organic Asiatic melon diced
- 1 medium organic red onion diced
- 2 large organic fleurs d'ail (garlic flowers) chopped finely
- 2 Tbsp unrefined sea salt
- 2 Tbsp whey

This made enough to fill 1 liter  & 1 500 ml. mason jar to about 1" below the rim, This was a little fuller than I would have liked...  I thought it would be enough for 2 1 liter jars, but no... so one large & one smaller jar felt like the best fit... I left them in a cupboard for 3 1/2 days and then refrigerated...  The smaller jar wasn't fermented completely, so I took it out of the fridge and left it in the cupboard for another 4 days... then put it back in the fridge, moving it to the basement once fermentation had stabilized.
