Hummus Lacto-Ferment Kind of...


- 1 cup dried black eyed peas cooked -- this made just a little more than 2 cups cooked.  I included all of it plus the small amount of water left at the bottom of the pot.
- 5 Tbsp sesame seeds toasted
- 2 Tbsp sesame oil
- 1/4 cup water
- approx. 1 tsp. of pumpkin seed oil with garlic that I had in the fridge...
- 1 non-organic lemon -- juice & pulp
-  1/2  rounded tsp. unrefined sea salt
- not quite 1/4 cup lemon/grapefruit kefir water with a little of the water from my #1 cucumber mix to make just a little more than 1/4 cup of liquid.
I blended everything together in the blender, except for the last item, put it in a glass bowl, then mixed in the 1/4 cup of culture.  This made a very thick paste, almost too thick to blend well... Nonetheless, I packed it into a one liter mason jar and left it in the cupboard for 4 1/2 hrs.,
then got nervous in case the mixture had been too warm when I added in the culture... and, and, and..., so I unsealed it and tasted... It tasted quite good, but needed a touch of onion, so I added:
2 small slices of red onion minced
1Tbsp of the water from my #1 cucumber mix
Stirred these in and put it back in the cupboard again... I refrigerated it after 12 hrs.  It was bubbling out of the jar...
