Corn etc. Lacto-Ferment - Done May 27/15

- 2 pkg. frozen non-organic corn
- 1/2 a large red beet shredded
- 1/2 celery root (celeriac) shredded
- 1 large non-organic onion diced
- 1 non-organic clove of garlic chopped finely
- 1 Pink Lady apple
- 1 pkg. frozen cucumber diced
- 3Tbsp. of my cucumber/cabbage mix as a starter
-  juice and pulp from 1/2 non-organic lemon
- 2 Tbsp unrefined sea salt
I stirred everything except the starter together, then left it out to warm up a little before adding the starter.  This made enough to fill 3  liter mason jars to a little below the shoulder.   I left them in the cupboard for 2 days after they came up to room temperature, which took about a day, so they spent a total of 3 days in the cupboard...  and then moved them to the fridge...
