Mango/Beet Lacto-Ferment: Made May 4/16

- 1 non-organic mango chopped
- 5 slices of frozen cucumber diced
- 4 large slices of frozen kohlrabi diced
- 3 med gold beets grated
- 1/3 a small celery root (celeriac) grated
- 1 med/small non-organic onion finely chopped
- 1 clove of non-organic garlic minced

- 3/4  Tbsp sea salt
- 1 1/2 Tbsp. cabbage/cucumber mix as a starter
I mixed everything together and packed it into 1 liter and one 500 ml. mason jars filled to the shoulder.  I left them in the cupboard for 3 days, then put them in the fridge to stabilize before moving them to the basement...
